I love to cook/bake esp during the holidays. everything was great. with my baked goods, this one is always the biggest hit.. citrus biscotti, they are so good and tasty. I conjured up the recipe back in calif, we had a mexican lime tree in the yard, which is always abundant with fruit during decemmber So instead of all the fruit going to waste, I made this citrus glaze with the limes and some oranges and made a bunch of batches for family/friends and co workers.. Not having any citrus trees in oregon I had to go out and buy the dang fruit, which made me mad, afterall, it's the principle So here they are..

Any tamales under the tree (which I understand is a Mexican tradition)? Or do they consider that "outlawed" in Oregon?

No tamales this year Erik, not because of where I live. ha ha.. Still not that confident w/o my mom here to guide me.. (the tamale queen) determined by nature I'll do it eventually!

now I want mexican food.. enchiladas are good w/ las palmas sauce, and believe it or not, my grandmother then passed to my mom would boil pork n beans to a sauce and use for the inside you can add shredded pork or beef or whatever, I prefer them with the pork n bean sauce and a scoop of cream cheese baked with my salsa.. heaven/divine. lol w/ homemade refried beans w/ bacon drippings.. and spanish rice.. very good cheap and fast meal.

It's pretty fast.. anyway, I made some cheese potato soup the other day and froze it, I had a little of it.. man it tastes so good re heated.. or I was just craving it. Now to make turkey soup with all the left overs..
